Vegetable Paratha is my all time favorite – I make it both ways either pressure cooking the vegetables and adding it along with the flour and another one is sautéing the veggies and cooking to make it as a stuffing.

About Mix Vegetable Paratha
Mix Veg Paratha is a Indian flat bread made using wheat flour, mixed vegetables and spice powders. The vegetables are cooked, mashed and added to the dough which makes the parathas soft and tasty.
For this mixed paratha, you don’t need any side dish at all just raita is enough to finish off the dinner or meal. At the same time its wholesome and healthy with all the vegetables.
I’m sure kids who hesitate to eat veggies will like this paratha with pickle and raita. So this is one of the ways to sneak in vegetables for kids who don’t eat them. You can make this as stuffed veg paratha too.

Mix Veg Paratha Ingredients
- Wheat Flour – Wheat flour or chapati flour is used to make the paratha dough.
- Mixed vegetables – I have used carrots, beans, cabbage and cabbage. You can even add potatoes, peas etc.
- Spice powders – Turmeric powder, Chili powder, Cumin seeds powder, Garam masala powders are added to the dough.
- Coriander leaves – Coriander leaves adds great flavor so do not miss it.
- Oil – Oil is needed to toast the paratha. You can even use ghee for toasting.
How to make Mixed Veg Paratha Step by Step
1.Chop the vegetables as finely as possible using a chopper or food processor and pressure cook for 2 whistles in medium flame along with salt, turmeric powder and little water till immersing level. Mash the vegetables well so that its easy while rolling. Reserve the vegetable stock.
2.Add the mashed veggies along with wheat flour, then add red chili powder, jeera powder, garam masala powder, chopped capsicum, coriander leaves and required salt. Add the vegetable stock and if required add water to form a soft pliable dough. Let it rest for 30 minutes at least. Form lemon sized balls, flatten slightly.
3.Dust flour on the rolling surface and roll into thin/thick parathas. Heat oil in a tawa, and cook the parathas on both the sides.
Serve hot with curd and pickle.
Expert Tips
- You can alternatively saute the veggies and cook and make it as a stuffing.
- For 2 cups of flour see to it that your sautéed veggies comes to 1 cup at least.
- Veggies is totally of your choice, you can even use green peas, paneer also etc
- Be very careful while adding water as the veggies will leave out water.
Serving and Storage
Mix Veg Paratha is great to serve with curd and pickle. You can store the leftover dough for 2 days in fridge. Make parathas when you want to serve and always serve hot for best taste.
