Trying out new variety rice has become a routine these days. I had bookmarked this Peanut Rice Recipe long back from a cookbook and suddenly remembered and made it last week. It turned out to be a great one pot rice. You can serve it with any vadams / papads as side dish. We call it kadalai sadam in tamil.

Peanut Rice is an easy and quick to make variety rice perfect to pack for lunchbox. It is very easy and quick to make perfect for lunchbox or for packing. I love all variety rice and now this has added to my list too.

Peanut Rice Ingredients
- Cooked rice – I have used parboiled rice cooked using straining method. You can use basmati rice too.
- Roast and grind – Peanuts along with urad dal, sesame seeds, red chilies and coconut is roast and grind to a coarse powder and used.
- Tempering – A tempering is done with peanut oil, mustard seeds, curry leaves and peanuts.

How to make Peanut Rice Step by Step
1.First add all other ingredients except coconut and roast till peanuts turn slightly golden then add coconut and roast till nut turn golden brown and coconut is dry.

2.No need to brown the coconut. Cool down the mixture completely then transfer to mixer jar. Grind to a slightly coarse mixture.

3.Heat oil in a kadai – add the items listed under ‘to temper’ let it splutter. Now to a mixing bowl add rice, peanut mixture and tempering along with required salt. Mix well.

Expert Tips
- You can make the spice powder a day ahead and just mix it the next day to pack for lunch.
- While grinding just pulse and grind else the spice powder will become sticky.
Adding a teaspoon of oil while mixing rice keeps the rice moist. - If you do not have peanut oil replace it with gingelly oil or normal cooking oil.
Serving and Storage
Peanut rice can be served with papad or any thogayal. Peanut rice keeps well in fridge for 1 days, reheat and serve it.

Ingredients

- 1/4 cup peanuts

What do we call gingelly oil in hindi…???and what are the options in case this is not available..???
