I had bookmarked this Peanut Rice Recipe long back from a cookbook and suddenly remembered and made it last week.It turned out to be a great one pot rice. You can serve it with any vadams / papads as sidedish.We call it kadalai sadam in tamil.

Peanut Rice
Ingredients
- 2 cups cooked rice
- salt to taste
To roast:
- 1/4 cup peanuts
- 1 teaspoon urad dal
- 1 tablespoon sesame seeds
- 2 nos red chillies
- 2 tablespoon coconut
To temper:
- 2 teaspoon peanut oil
- 1/2 teaspoon mustard seeds
- few curry leaves
- 1-2 tablespoon peanuts
Instructions
- First add all other ingredients except coconut and roast till peanuts turn slightly golden.
- Then add coconut and roast till nut turn golden brown and coconut is dry. Do not brown the coconut.
- Cool down the mixture completely then transfer to mixer jar. Grind to a slightly coarse mixture.
- Heat oil in a kadai - add the items listed under 'to temper' let it splutter.
- Now to a mixing bowl add rice, peanut mixture and tempering along with required salt. Mix well. Enjoy Peanut Rice!

Adding a teaspoon of oil while mixing rice keeps the rice moist. - If you do not have peanut oil replace it with gingelly oil or normal cooking oil.

What do we call gingelly oil in hindi…???and what are the options in case this is not available..???
