Atta Halwa is one of the easiest sweets that you can make and my most favorite too. I have tasted it in a restaurant and tried it at home, and no looking back after that I am making every now and then as it is quick and easy to prepare.

About Wheat Halwa / Atta Halwa
Atta Halwa is a popular Indian sweet made using wheat flour, sugar, ghee flavored with cardamom powder and garnished with nuts. This wheat halwa is an instant version and does not require lot of time and effort like the traditional method. This wheat halwa can be made in just 20 minutes from start to finish.
I have already made godhumai halwa using wheat flour few years back. Last month when hubby got dinner from Hotel Anandas, he also ordered wheat halwa for dessert. I tasted it and so loved it, the texture was smooth with ghee melting. After tasting it I remembered about this North Indian Version of atta ka sheera / atta halwa and wanted to posted it here.
This atta halwa is very quick to make, and tastes delicious perfect to make for sudden guests. It does not need long time of stirring, gets done quickly and perfect to make for Diwali too. Another variation of wheat halwa is kada prashad which I will post soon.

Atta Halwa Ingredients
- Wheat flour – Using coarse wheat flour is best but you can use fine flour too.
- Sugar – Use white granulated sugar. You can replace it with powdered jaggery or brown sugar or cane sugar too.
- Ghee – Use pure ghee for best taste.
- Cardamom powder – Cardamom powder is the only flavoring here. Though it is an optional ingredient I would suggest to add it.
- Nuts – I have used chopped almonds and pistachios at the last stage which is optional. You can add ghee fried cashews and raisins too.
How to make Wheat Halwa Step by Step
1.First to a pan add 3/4 cup sugar and 1 cup water to it.
2.Boil well until sugar dissolves completely, no need to check for consistency. Once sugar dissolves and starts to boil switch off and set aside.
3.Heat 1/3 cup ghee. You can fry nuts if you want, remove and set it aside.
4.Add 1/2 cup wheat flour to it.
5.Mix it well and keep roasting in low flame.
6.Roast until the color changes to dark shade and the mixture looks more like a paste. It will give a nutty aroma.
7.Now heat the prepared sugar syrup and add it.
8.Immediately stir well to avoid lumps.
9.It may look like small lumps are forming keep stirring and it will break off while cooking.
10.Cook until thick and the mixture leaves sides of the pan.
11.Add 1/4 teaspoon cardamom powder.
12.Mix it well.
13.Ghee slightly oozes at the edges this is perfect consistency.
14.Add 1/2 tablespoon chopped almonds, 1/2 tablespoon pistachios.
15.Mix it well and remove from flame.
Atta halwa or wheat halwa is ready!
Expert Tips
- Roasting – Do not lose patience while roasting, that is the main step involved so keep roasting for until the color changes. Roasting in low flame is important else it might get burnt.
- Sugar syrup – No need to check for any consistency just boil the sugar syrup until sugar dissolves and add it. The syrup should be hot while adding so heat it up once. Simmer flame while adding sugar syrup as it might splutter.
- To avoid lumps – You can even use a whisk to mix after sugar syrup is added to avoid lumps. Keep stirring to break the lumps if it forms.
- Nuts, dry fruits – You can even fry cashews, raisins in ghee and add it.
- Final stage – The halwa will leave sides of the pan and ghee starts to ooze at the edges, this is the right consistency to switch off.
Serving & Storage
Atta halwa taste great when served hot or warm. This halwa can be served as an after meal dessert or with puri. It keeps well in room temperature for about 8-10 hours. You can store the leftovers in fridge, reheat the next day in a pan and serve it. It keeps well in fridge for about 5 days.
FAQS
1.Which wheat flour to use?
You can use homemade wheat flour either plain wheat flour or even multigrain atta. Using coarse wheat flour gives a texture to the halwa, however you can use fine flour too.
2.What can I replace with white sugar?
You can use brown sugar or cane sugar or even powdered jaggery instead of white sugar and for a healthy alternate.
3.What to do if it forms lumps?
If the mixture turns lumpy immediately switch off the flame and use a potato masher or any flat ladle to press well to break the lumps. This will reduce the lumps and when starting to cook the remaining lumps will break too.

if we double up the measurements for the flour, will I need to double up all the other measurements too? Can pls add this in all your recipes… it is so good that if I make in smaller quantity it is not enough for my family.
