Carrot Poriyal is a simple stir fry and goes well with rice and sambar. I make stir fries always to pair up with meals and this carrot stir fry comes in the menu at least once a month. My kids also like carrot stir fry when made this way with mild spices so I make sure to include it often.

About Carrot Poriyal
‘Poriyal’ in Tamil means stir fried or sauteed so Carrot Poriyal translates to Carrot stir fry. This carrot stir fry recipe is very simple, mild and flavorful perfect to pair up with rice, sambar, rice and curd. You can use this recipe as base to make any stir fry.
Carrot Poriyal or Carrot Stir Fry can be made using grated carrots or cubes carrots. But we like it this way and call it carrot podimas meaning carrot stir fry using grated carrots. As we are grating carrots this poriyal is perfect for elders and small babies too as you can mash it easily.
Carrot Stir Fry can be made with coconut or without coconut. If you are packing for lunchbox you can skip coconut so that it stays good for long hours. Carrot Poriyal goes well with rice, roti etc. This can be used as a stuffing for sandwiches too.
This tasty carrot stir fry is quick and easy to make. Goes well with any variety rice or sambar rice. And carrots we get here are very fresh as they are straight from ooty and the color is nice fresh orange and they are sweet and tasty too.
Carrot Poriyal Ingredients
- Carrot – Choose tender fresh carrots. You can either grate them or make small cubes and use it.
- Onion – You can use small onion or big onion chopped finely.
- Tempering – A simple tempering is made with oil, mustard seeds, urad dal, curry leaves and green chilies.
- Coconut – Grated coconut is added at the final stage.

How to make Carrot Poriyal Step by Step
1.Wash carrots, peel the outer skin, grate it using a fine holed grater and keep aside. Heat oil in a kadai, add mustard seeds let it splutter then add urad dal let it turn golden. Add curry leaves, green chili and fry for a minute. Now add onion, required salt and sauté well till it turns transparent.
2.Then add grated carrots. Saute till it shrinks takes at least 5 minutes then sprinkle little water and cook covered till it turns soft and raw smell leaves. You can omit water and cook covered too. Cook until it becomes soft.
3.Once it becomes dry add coconut, give a quick stir and switch off.
Switch off and serve with sambar rice or any variety rice.
Expert Tips
- I always add coconut only at the last stage and switch off. But if you are packing or want it to stay good for more hours then sauté well after adding coconut then switch off.
- You can add a pinch of sambar powder for extra flavor.
- You can even cube carrots into small pieces and make stir fry.
- Adding small onion gives good flavor to the stir fry.
Serving & Storage
Serve carrot poriyal with rice and sambar the best combo. It serves great with rasam also. It keeps well in fridge for 1 day.
