I made paneer jalfrezi when my friend came home along with carrot kheer. I also made veg pizza and my friend asked whether the base was also homemade as it was very soft and yes I have started to make homemade pizza since few years now.

About Paneer Jalfrezi
‘Jhal’ in Bengali means hot and spicy and ‘Frezi’ means stir fry so Paneer Jalfrezi means basically it is a spicy stir fried dish made with paneer. There are many variations to this dish with mushroom, chicken, baby corn etc.
The key to a perfect jalfrezi is the crunch of the vegetables so do not overcook. I love the flavor of the combination of vegetables used along with paneer, it tastes so good. You can serve paneer jalfrezi with rotis or can be used as a stuffing for rolls, wraps or sandwiches too.

Paneer Jalfrezi Ingredients
- Paneer – Choose soft fresh paneer so that it does not crumble easily while sautéing.
- Vegetables – I have used onion, capsicum and tomato puree. You can even use cubed tomatoes.
- Ginger garlic paste – Ginger garlic paste adds flavor to the curry.
- Tomato sauce – Tomato sauce adds a tangy taste so do not miss it.
- Spice powders – Red chili powder and garam masala powders are used here.
- Cumin seeds – Cumin seeds is added while tempering.
How to make Paneer Jalfrezi Step by Step
- Heat oil, add jeera and allow it to splutter. Add onions and ginger garlic paste sauté until slightly golden.
- Now add the tomato puree and sauté until raw smell leaves, this may take at least 5mins. Add chili powder, garam masala powder and tomato sauce. Add required salt.
- Then add carrot sauté for 2 minutes then add 3 tablespoon water and keep covered to let it cook. When the carrot turns slightly soft yet crunchy to bite, add capsicum giving a quick stir.
- Add the paneer cubes and toss it well until the paneer cubes are well coated with the gravy. Allow it to cook for 2 minutes then switch off.
Expert Tips
- You can add any veggies of your choice, you add add corn, beans ,cabbage – It is purely your choice to go with the veggies.
- Make sure to cook vegetables with crunch so not make it too soft.
- Chop all the veggies thin and lengthwise to get cooked soon and crunchy
- You can use readymade tomato puree also. I used freshly prepared homemade puree.
Serving & Storage
Paneer Jalfrezi serves as a side dish for roti, pulao, rice etc. It keeps well in fridge for 2 days, you can reheat and serve it.
