I received a reader request to make mushroom do pyaza so googled around to find the recipe. Mushroom Do Pyaza is a semi gravy side dish which is apt with pulaos / jeera rice or even plain basmati rice, not to forget the pairing with phulkas, apt combo!

About Mushroom Do Pyaza
‘Mushroom Do Pyaza’ means mushrooms with double amount of onions. This easy mushroom curry can be made in just 30 minutes. It can be made semi gravy or even dry as per your preference.
The other popular variations to this dish are paneer do pyaza, chicken do pyaza and bhindi do pyaza. I love all do pyaza recipes the onion sautéed with masala gives it a unique taste.
‘Do’ in Hindi means two and Pyaza means onions so Do Pyaza means doubke amount of onions. It implies that this dish has double the amount of onion than mushrooms so if you 1 cup mushrooms add 2 cups onions.

- Mushroom – Choose white fresh button mushroom.
- Onion – Slice big onion thinly and use it.
- Tomato – Blend tomatoes to a fine puree and use it.
- Spice powders – Red chili powder, coriander powder, cumin powder and garam masala powders are used here.
- Ginger garlic paste – Ginger garlic paste is used for flavor.
- Coriander leaves – Coriander leaves is added at the final stage for garnishing.
How to make Mushroom Do Pyaza Step by Step
1.Clean mushroom and slice each mushroom into 3-4 slices. Peel the skin of onions and half it. Cut further into slices lengthwise and open out the layers, Set aside. Grind tomatoes to a fine puree, Set aside.
2.To a pan heat oil – add jeera and cardamom let it splutter. Add ginger garlic paste and onions, fry till slightly browned. Then add tomato puree along with red chili powder, cumin powder, garam masala powder and coriander powders.
3.Mix well and sauté till raw smell of tomatoes leave. Then add mushroom, saute for 2 minutes in high flame it will leave out little water, then sprinkle some more water and cook covered for 3-5 minutes.
4.Finally add fresh cream, let it boil for a minute. Finally garnish with coriander leaves and switch off.
Serve hot with rice or roti!
Expert Tips
- You can skip cream and add 1/4 cup milk too.
- You can even reserve little onions deep fry in oil till nicely browned and add it at the last stage.
- Adjust spice level according to your preference as I liked mine a bit less spicy.
Serving and Storage
Mushroom Do Pyaza can be served hot with rice, roti etc. I served with jeera rice and dal, sure a comforting combination. This curry keeps well in fridge for 2 days, reheat and serve it.
