We usually make plain savory sevai along with sweet sevai. At times I make this lemon sevai too. Though I prefer the sweet version I can have this when accompanied with the sweet version. Hubby loves anything savory so undoubtedly this is his favorite too, and mittu is like me, she loves the sweet version.

About Lemon Sevai
Lemon Sevai is made by first preparing rice noodles then cooking it with tempered items and finally adding lemon juice to it to give a tangy lemon flavor and taste. Lemon Sevai is plain sevai with lemon flavor and you can make so many variations with it.
This lemon sevai recipe is very simple and quick to make. It is perfect to pack for lunch box too, you can pair it with tomato chutney which is the best combination.

- Idiyappam – You can use homemade rice noodles or buy from stores too.
- Lemon juice – Extract lemon juice using a lemon squeezer and keep it ready.

How to make Lemon Sevai Step by Step
1.Make the idiyappam ready. Cool down and then separate it, set aside .Heat oil in a pan – add the ingredients listed under ‘to temper’ fry till the dal turns crisp and peanuts turn golden brown. Then add turmeric powder, hing and sauté for a minute.
2.Add the idiyappam, required salt and give a quick stir. Finally add the lemon juice and switch it off.
Serve hot with coconut chutney or chutney of your choice!

- You can soak the chana dal in water for few minutes to make it soft and then use it for tempering too.
- I usually add the lemon juice and switch it off immediately to avoid bitterness.
- Garnish with coriander leaves if you prefer.

@Anuja : You can make the idiyappam ready 3-5 hrs ahead and refrigerate it, then while making lemon sevai just steam cook the refrigerated idiyappam for 2-3 mins and can use it….Storing overnight is not recommended….
