Easy vegetable sandwich with onion,carrot and capsicum filling, it can be made in just few minutes.
This veg sandwich or vegetable sandwich is one of the easiest sandwich recipes I have made so far. This can be one of the ideal lunch box recipes for kids and office goers too.
I always look for easy sandwich recipes and this one is perfect as it can be done quickly. Once veggies are cut and ready you can make this sandwich in a jiffy.
About Veg Sandwich Recipe
This sandwich is basically made with vegetable filling placed inbetween 2 slices of bread, then toasted in butter. Make the stuffing with vegetables sauted and spiced up with indian spices like red chilli powder and garam masala powder. I have used most common vegetables found in every indian kitchen like onion, capsicum and carrot. But the variations are endless. I have used mayo for binding else the filling will be dry and may fall apart while cutting.
Variations
- You can add any variety of mix vegetables like mushroom, corn, spinach etc.
- I have used mayo for binding you can use white sauce or even hung curd.
- Adding cheese gives it a nice taste and kids will love it for sure. You can add grated cheese or cheese slice.
- You can either grill the sandwich using a griller or just toast in dosa tawa like I have did.
Serving and Storage
- This sandwich can be had as such or served with tomato sauce.
- I got 3 sandwich for this measurement. Serve it hot for best taste.
- I wouldn’t recommend storing as the filling will make the bread soggy.

Veg Sandwich | Vegetable Sandwich
Ingredients
For vegetable filling:
- 1 teaspoon garlic crushed
- 1 medium sized onion finely chopped
- 2 small carrots finely chopped
- 1/2 small capsicum finely chopped
- 1 teaspoon red chilli powder
- 1/2 teaspoon garam masala powder
- 1 tablespoon mayonnaise
- salt to taste
Instructions
- Heat oil in a pan - add crushed garlic.
- Add onion along with salt, saute until golden.
- Add carrot and capsicum.
- Saute until it shrinks and raw smell leaves.
- Add red chilli powder and garam masala powder.
- Give a quick saute.
- Add mayo.
- Mix it well. Switch off.
- Add generous filling to a bread slice.
- Seal it with another slice.
- Heat butter on a dosa tawa. Place the prepared sandwich. Press with dosa flipper.
- Brush with butter on top.
- Flip over and toast until golden brown on both the sides.
- Remove and place on chopping board, slice into half and serve Veg Sandwich hot!

Veg Grilled Sandwich Recipe
Recently I happened to taste Veg Grilled Sandwich in mittus school canteen, As usual mittu ordered this sandwich seeing other kids but just had a mouth and gave it to me.I have always seen many kids buying this sandwich in the canteen so was curious to taste it too and it finally happened…The sandwich had just few veggies with no cheese but still it tasted great, I first opened the sandwich and saw what all went into it, then tasted it so I could easily guess the ingredients and making of it.
Few days later I tried this sandwich to replicate the canteen sandwich and it came almost closer to it and we loved the taste. And finally I used my new griller sandwich maker after few months of keeping it idle.

Bread – 8 slices
Carrot – 1 cup grated
Dried Green Peas – 1/3 cup
Big Onion – 4 tablespoon + 4 teaspoon finely chopped
Red Chilli Powder – 1.5 teaspoon
Garam Masala Powder – 1 teaspoon
Green Chutney – 4 teaspoon
Tomato Ketchup – 2 teaspoon
Chat Masala powder – as required
Butter – to toast
Salt – to taste
Method:
- Soak dried green peas overnight.Pressure cook for 2 whistles and set aside.In a pan heat oil add jeera, let it crackle add ginger garlic paste and onion fry till slightly browned.
- Then add carrot and saute till it shrinks and raw smell leaves.Now add red chilli and garam masala powder and saute for 3mins.Now add cooked green peas mix well, use a masher to roughly mash it up.
- Now add tomato sauce and toss it, the mixture should be semi dry with a slight moisture in it.Set aside to cool.Now take bread slices.
- Apply green chutney on one side of each bread, spoon a generous mixture of the prepared veggie stuffing.Add chopped raw onion and sprikle chat masala powder.
- Close with another bread.Spread butter on top side of the bread.Brush the sandwich maker with butter so that the bottom side of the bread gets toasted well.
- Place the bread in the sandwich maker and toast for 3 mins or until crispy.Cut into triangles and serve hot!
Serve hot!
My Notes
- You can add any vegetable of your choice.Capsicum,cabbage are few of my suggestions.
- You can either toast in dosa tawa or use sandwich maker.
- I used white bread, you can use wheat or multigrain bread too.
- You can make the green chutney before hand and refrigerate it.
- This sandwich has to be served immediately else it will become soggy.
Veg Sandwich
This is an easy sandwich recipe which you can make with the available ingredients in the pantry. No cheese in it and you have a healthy sandwich, and with a glass of milk and fruits it makes a wholesome combo. I served it with rosemilk and watermelon, which was perfect for a hot summer day.
Bread – 4 slices
Carrots – 1 medium sized(sliced thin)
Onion – 1 medium sized
Green Chutney / Green Pesto – 3 teaspoon
Tomato Sauce – 2 teaspoon
Pepper powder – 1/2 teaspoon
Ghee – 2 teaspoon
- Get all your ingredients ready.Slice carrot and onion into thin circles as shown. Place the slices of bread on the work surface.First apply green chutney on one side of the bread…place carrot,onion slices then sprinkle pepper powder, apply tomato sauce on other side of the bread. Close it.Repeat the same for other 2 slices also.
- Grease the sandwich maker with ghee and apply ghee on the bread.Toast it for 3-4 mins or as per the sandwich makers instruction. Serve hot as a teatime snack or for breakfast too. You can add in cheese slices too as per your preference. I made it for me and hubby so didnt want to add in more calories.
Tips
- You can add veggies of your preference like cucumber, tomato etc.
- If you dont have a sandwich maker then toast it in a dosa tawa but make sure you seal the edges or close the sandwich with butter or cheese so that it sticks well and does not open up.In sandwich maker it seals the edges so I didnt add anything extra.You can even grill the sandwiches.
- You can add cheese slice or apply hummus too.
- I used white bread, you can use wheat or multigrain bread too.
- The veggies get halfcooked in the sandwich makes which will be missing when you toast them in the tawa.But anyways these veggies taste great in raw form too so dont worry.
