Poha Kesari an easy kesari that you make with aval or poha for gokulashtami. I didn’t plan to make this aval kesari but suddenly craved for kesari so made this and enjoyed.
If you are not confident / scared about trying out seedai,murukku recipes here is an easy recipe for you….I just made it like rava kesari recipe and it did satify my kesari craving. After the kitchen disaster I planned to keep it simple this year with homemade butter and aval urundai for gokulashtami which is a day away…Whats your plan?

Aval Kesari | Poha Kesari
Ingredients
- 1/2 cup aval / poha I used thick variety
- 3 and 1/2 tablespoon ghee
- 1/2 cup sugar
- 1 tablespoon cashews
- 15 nos raisins
- 1 cup water
- 10 strands saffron
Instructions
- Soak saffron in warm water, set aside. Dry roast poha until crisp.
- Break to check, if it easily breaks then its crisp if it bends then roast for few more mins.
- Cool down then transfer to mixer jar and grind to as lightly coarse mixture, Set aside.
- Heat 1 tablespoon ghee, add cashews fry for a min, then add raisins fry till they turn golden. Remove and set aside.
- Now in the same pan add poha mixture.Roast for 2 mins.
- Take 1 cup water and heat it up. Add it, keep stirring simultaneously. Keep stirring in low flame to avoid lumps, even if it forms break it and mix well.
- It will get cooked in a minute, keep stirring it will become thick. At this stage add sugar and saffron water.
- Mix well, it will be runny at this stage. Once it starts to thicken add remaining ghee. Mix well and keep stirring. At one stage the whole mixture will leave the sides of pan and come together.
- This is the right stage so add fried cashews, raisins give a quick mix and switch off.
- If you like cardamom flavour then add a pinch of cardamom powder too.
- Serve Poha Kesari warm.
