I buy broccoli whenever I see it nice fresh and green. I usually make broccoli stir fry or oven roasted broccoli. Last time I reserved few florets to try out this paratha and it came out so good. I wanted to make it simple with no onion and garlic and here is the recipe for broccoli paratha.

About Broccoli Paratha
Broccoli Paratha is a stuffed paratha variety made using broccoli, herbs and spices. It is tasty, healthy and filling for breakfast or dinner. Even kids and elders who don’t like broccoli will surely love to eat this.
Mittu is not fond of broccoli but loves to eat it in paratha form or in soups. You don’t even need side dish, just pair it up with curd or pickle your breakfast is sorted. As we fine shredding broccoli it is easy to roll too.

Broccoli Paratha Ingredients
- Wheat Flour – Wheat flour or chapati flour is used to make the paratha dough.
- Broccoli – Choose fresh green colored broccoli.
- Spice powders – Red chili powder, coriander powder and garam masala powder is used.
- Ajwain seeds – Ajwain seeds seeds are spluttered for tempering.

How to make Broccoli Paratha Step by Step
1.In a wide bowl add wheat flour salt and required water, mix well and knead it form a soft dough as chapati dough.(The quantity shown in the below pic may differ from the actual as I used my rajma paratha step pic for this).Rest the dough until we make our stuffing ready.

2.Separate broccoli florets and soak in warm water+ little salt for 10 minutes. Then drain water and chop / grate them fine(I used my vegetable chopper to do this),Set aside. To a pan – heat oil and add ajwain seeds, let it crackle.

3.Then add grated broccoli and sauté for 3 minutes then add spice powders along with salt and sauté until raw smell leaves. Sprinkle little water and cook covered with a lid till it turns soft and the color changes to pale green. Now the stuffing is ready, transfer the stuffing to a bowl and set aside.

4.Flour the surface and roll the chapati dough slightly thicker. Then add stuffing at the center and gather the dough from all sides like shown below. Seal it finely

5.Flip to other side. Now again flatten it slightly with your palms and then start rolling gently. Roll it without the filling oozing out. Dust flour so that it doesn’t stick. Heat a dosa tawa , transfer the parathas, drizzle little oil and cook on both sides until born spots appear.

Serve hot with any pickle of your choice or with curd!

Expert Tips
- While rolling for the first time don’t give more pressure in the center as the filling is going to be placed in the center and rolled again so make sure the center part is little thicker.
- Gently roll the parathas and dust flour as and when needed.
- Roll your parathas thick or thin as you like it.
- I used my chopper to chop broccoli fine. You can use grater / mixer with pulse option. Don’t grind it smooth.
Serving and Storage
Broccoli Paratha is great to serve with curd and pickle. You can store the wheat flour and stuffing in fridge for 2 days. Make parathas when you want to serve.

I use raw broccoli, either grated of chopped in the chopper, mixed with ginger, salt, pepper, a bit of chilli. The result is amazing, as the broccoli retains its vivid green colour and does not lose its properties through over cooking.

It was awesome.I had some leftover broccoli stuffing. so with the leftover , I used in my idly like we garnish other vegetables i used this one. It came out very well as broccoli idly . For this fine mincing I used my chopper which I got from Rathna Stores…dont remember the brand.But for other veggies I use a knife only for chopping 🙂
