Cabbage Thoran has become my family favorite ever since I started making it. I learnt this simple Kerala style stir fry from my friend. Most of the kerala dishes recipes are from here. Cabbage Thoran can be made in numerous ways and I have shared 2 variations here one with carrot and other a simple version with just cabbage.

About Cabbage Thoran
Cabbage Thoran is a dry side dish basically a simple stir fry made with cabbage, sauteed with coarse grind fresh coconut mixture along with other spices. Thoran is a simple stir fry made with vegetables of your choice and here I have used carrot and cabbage.
Cabbage Thoran is usually prepared as a part of Onam Sadya menu. Sadya is a feast prepared by Keralites for all occasions including onam, vishu, birthdays or any family special occasions.
Cabbage Thoran is served along with rice, sambar or parippu curry.The combo of hot rice with parippu curry and thoran is an unbeatable combo. Thoran is one of the must in the the Kerala feast called ‘Sadya’. Traditionally coconut oil is used for thoran which gives a great flavor and taste.
I love cabbage thoran with rice and parippu curry but tastes good with sambar too. You can make plain cabbage thoran or add carrots along with cabbage to make carrot cabbage thoran as I have made. I have shared both the recipes here, choose your pick.

Cabbage Thoran Ingredients
- Cabbage – Shred cabbage thin else chop them finely. You can even chop it lengthwise or in small cubes.Carrot is optional but adds taste when combined with cabbage.
- Coconut mixture – Coconut along with small onion, garlic, cumin seeds and green chili is grind to a coarse mixture and added.
- Tempering – Mustard seeds, red chili, curry leaves are tempered in coconut oil.
How to make Cabbage Thoran Step by Step
1.Trim the edges of 1 medium sized carrot, peel off the skin. Grate carrot finely using a grater, measure 3/4 cup and set aside.
2.Grate cabbage – thin shreds as shown below. Measure 2 cups and set aside.
3.To a mixer jar : add 1/2 cup coconut, 5 nos small onion, 2 garlic cloves, 1 tsp cumin seeds and 1 long green chili.
4.Grind it coarsely without adding any water. Set aside.
5.To a kadai heat coconut oil – add 2 tbsp coconut oil, 1/2 tsp mustard seeds, 1 small red chili, few curry leaves. Let it splutter.
6.Once it splutters add carrot,cabbage.
7.Add salt to taste and 1/4 teaspoon turmeric powder to it.
8.Saute for 2-3 minutes.
9.Add 1/2 cup water to it.
10.Cook covered for 5-7 minutes.
11.Cook until the veggies turn transparent and slightly soft.
12.Once veggies are cooked, add coconut mixture.
13.Mix well.Keep sauteing and cook until raw smell leaves. Cook at least for 5 minutes.
14.Once raw smell leaves mix well and switch off. Cabbage carrot thoran is ready.
Serve with rice and curry of your choice.

Cabbage Thoran Kerala Style
Ingredients
- 1 and 1/2 cups cabbage shredded
- 7 small onion sliced
- 1/4 cup coconut grated
- 1/4 teaspoon turmeric powder
- 1/2 teaspoon red chili powder optional
- salt to taste
- To temper :
- 2 teaspoon coconut oil
- 3/4 teaspoon mustard seeds
- 1/2 teaspoon cumin seeds
- a small sprig curry leaves
- 2 red chili
Step by Step
1.Grate cabbage or chop them finely which is what I did. To a bowl – add 1 and 1/2 cups shredded cabbage, 7 small onion sliced and 1/4 teaspoon turmeric powder.
2.Mix well and Set aside.
3.In a pan heat 2 teaspoon coconut oil – add 3/4 teaspoon mustard seeds, 1/2 teaspoon cumin seeds, a small sprig curry leaves, 2 red chili let it splutter.
4.Then add cabbage onion mixture .
5.Saute for 5-7 minutes until raw smell leaves.
6.Then add salt to taste and 1/2 teaspoon red chili powder. Cook covered until it becomes slightly soft. Make sure that it doesn’t get burnt at the bottom so stir it occasionally.
7.Once cabbage is cooked and blended with the spices, finally add coconut mixture.
8.Give a quick stir and switch off.
Simple cabbage thoran is ready!
Expert Tips
- Cook covered or else sprinkle little water and cook.
- Adding red chili powder is purely optional so you can skip it too.
- Adding coconut oil gives a great flavour to the curry.
- You can even mix curry leaves along with cabbage.
- Always make sure to add coconut only after the veggies is cooked.
- You can replace cabbage, carrot with beetroot, beans, green moong dal etc.
- You can also add a combination of vegetables as per your preference.
- You can either grind onion, garlic along with coconut or add it while sauteing.
Serving & Storage
Serve Cabbage Thoran as a side dish with rice. You can even serve it with chapati tastes great. This keeps well in fridge for 1 day.
FAQS
1.What other vegetables can I use for thoran?
You can use beetroot, beans, spinach, drumstick for making thoran. You can even use green gram dal or black chana for making thoran.
2.Can I skip coconut oil?
Yes you can replace coconut oil with regular cooking oil. Coconut oil adds more flavor to the dish so I recommend adding it.

Ingredients
Cabbage Thoran(with carrot)

- 1/2 cup water
