Cashew Pulao | Kaju Pulao
Ingredients
- 1/2 cup basmati rice
- 1/2 cup onion sliced
- 1 cup water
- 10 nos whole cashews
- 2 teaspoon oil
- 2 teaspoon ghee
- salt to taste
To temper:
- 1 tablespoon ghee
- 1 no small bayleaf
- 1/4 inch cinnamon
- 2 nos small cloves
- 1 no cardamom
- 1/2 teaspoon cumin seeds
- 1 no green chilli(slitted)
- 1/2 teaspoon crushed ginger garlic
Instructions
- Heat oil in a kadai add onion and fry until golden brown and crisp.Set aside.
- Soak basmati rice for 15 mins.Meanwhile in a pressure cooker heat ghee add the items listed under 'to temper'.
- Let it crackle, give a quick saute.
- Then drain water from rice completely then add it, give a quick saute for a minute.Add required salt.
- Add 1 cup water.Pressure cook for 3 whistles in medium high.Switch off let pressure release by itself.Open and fluff it up.
- Heat 2 teaspoon ghee in a kadai - fry cashews until golden and crisp.
- Add fried cashews and onions, toss well. Serve Cashew Pulao hot!
How to make Cashew Pulao
