About Chapati Noodles
Chapati noodles is great idea to use up leftover chapati. Kids will also eat it without complaining and it is healthy alternate to the regular noodles/ Incuding mixed vegetables makes it not only colorful but also healthy.
The first time I had chapati noodles was during my 10th std at my aunts place but her version was slightly varied which was more indianised. I modified the recipe a bit and followed my fried rice recipe for this chapathi noodles and have been following it lately as we are hooked on to the taste.
This is the best chapathi leftover idea I have found over the years. Sometimes I just add sambar powder, coriander powder and make it indianised. So no more second thought when there is left over chapathi at home. This is sure another take for our kothu parotta.

Notes
- Cooking covered is optional, if you want more crunchy vegetables then just saute and proceed.I usually cook covered for a min to make veggies a bit softer suitable for kids.
- Sauces I had so added, but you can skip the sauces if you want. But I would suggest to add soya sauce and tomato sauce(ketchup) atleast to get the chinese flavour.
- Add crushed pepper for more flavour, I used my pepper mill to crush and add.
- Do not skip spring onion, it gives a nice flavour to the noodles.I used homegrwon spring onion which amma planted.
- Make sure its not too dry, add sauces and oil accordingly.
