Chicken fried rice recipe a popular Indo Chinese one pot meal.Usually fried rice is one of the popular dishes in restaurants and hubby is fond of all types of fried rice recipes.He likes egg fried rice very much and rarely have seen him enjoy chicken fried rice too.So I wanted to try it at home.
As I am trying it for the first time,I got few tips from a aunt who makes yummy chicken fried rice and it came out so good.

Chicken Fried Rice
Ingredients
- 1 cup basmati rice
- 2 cups water for cooking rice
- 1/4 kg chicken
- 2 nos eggs
- 2 teaspoon ginger garlic paste
- 1 tablespoon spring onions white part
- 1 tablespoon spring onions green part
- 1/4 cup big onion chopped finely
- 1 tablespoon garlic crushed
- 1/2 cup capsicum chopped finely
- 1/4 teaspoon soya sauce
- 1 and 1/2 teaspoon pepper powder
- 3 tablespoon olive oil / cooking oil
- salt to taste
Instructions
- Rinse rice, Soak rice for 15 mins. Pressure cook it with required water for 3 whistles till rice grain is separated.
- Add a teaspoon of olive oil, Fluff it off with a fork, keep aside.
- In a pressure cooker add chicken along with salt and ginger garlic paste. Saute and cook for 2 mins.
- Add required water and pressure cook 3 to 4 whistles. Remove the chicken pieces, you can use the stock for making soup or gravy.
- Shred the chicken pieces, discard the bone. Now get ready with the chopping of all other ingredients.
- Heat oil in a pan - add spring onion white part along with garlic. Saute for a minute.
- Then add onion cook till it turns transparent. Add chopped capsicum cook for few mins until it shrinks.
- Then add shredded chicken and saute for a second then add soya sauce.
- Add vinegar and pepper powder. Cook in high flame for a minute.
- Lower the flame and cook for few more mins until it all comes together. Bring the mixture to the side of the pan and crack open 2 eggs on other half side of the pan.
- Add required salt. If you want you can taste check it and add more pepper powder if you want at this stage. Add spring onion green part.
- Toss it well. Finally add cooked rice, toss it well and cook for another 3mins and switch off. Enjoy Chicken Fried Rice!
Notes
- Soaking and cooking helps in grain separated and soft rice.
- I usually use 1cup:1.5 cup ratio for rice : water.
