About Thandai Powder
Thandai powder is great to flavour milk or even in your desserts. Thandai is one of the drinks made for Holi festival. This is one of the healthy flavouring you can opt for kids. I am sure they will love it.
Traditionally thandai is made by soaking nuts, spices and grinding them which is a bit time consuming. Thandai can be made in just few minutes if you have this homemade thandai powder. Once you have the thandai mix ready just mix it with chilled milk and your thandai is ready.
I have not used poppy seeds in this recipe but if you want you can add 1 teaspoon poppy seeds while grinding the spices.
Homemade Thandai Powder vs Storebought Thandai Powder
Homemade thandai powder is free from artificial colors, flavouring and preservatives. Also you know exactly what ingredients goes in the making so homemade is more healthier. You can make in small or batches as and when required.
Storebought thandai powder is loaded with preservatives which is not a good option if you are looking for a healthy thandai mix.
Thandai Powder 2 Ways
- Method 1 : In this method the spices are first grinded and sieved to remove the fibrous part then grinded along with nuts, sugar and saffron. Mix it well and thandai powder is ready. I have not used dried rose petals here to increase shelf life. You can use rose petals while serving. As the spices are already sieced you can add the thandai powder directly to milk and serve.
- Method 2 : In this method, all the ingredients are just blended together along with nuts, spices, saffron, rose petals and stored. Sugar is added while mixing and serving with milk. This method may need straining but it is purepy your preference.

Thandai Powder Ingredients
- Nuts : Cashews, Almonds, Pistachios and Melon seeds are used for making thandai powder. You can blanch almonds and use it or use it just as it is too.
- Spices : Spices are the main ingrdients that gives great flavour to thandai powder. Spices like cardamom,fennel seeds, saffron, black pepper are used to make thandai powder. Dried rose petals can also be used as I have shared in Method 2 but you can skip it if you don’t have in stock.
- Sweetner : I have used white sugar here which is most commonly used to make thandai and thandai mix. But alternatively you can use jaggery powder or cane sugar or brown sugar too etc.

Thandai Powder
Ingredients
- 2 to 3 cups milk
- 1/4 cup sugar
- 1/4 cup almonds
- 1/8 cup cashews
- 1/8 cup pistachios
- 1 tablespoon melon seeds
- 1/2 teaspoon pepper corns
- 1/8 cup fennel seeds
- 5 nos cardamom
- 10 strands saffron
If adding add 1 teaspoon poppy seeds while grinding the spices
Instructions
Thandai Powder / Thandai Mix
- To begin with : to a mixer jar first add fennel seeds, cardamom, pepper corns and sugar.
- Grind it to a fine powder add to a sieve.
- Sieve it well. Discard the remains or use it for milk, strain and drink it will still be flavourful.
- Sieved mixture ready, Set aside for later / future use.
- Now to the same mixer jar, add almonds, cashews, pistachios, melon seeds, sugar and saffron.
- Grind it as fine as possible. Add it to the sieved mixture. Mix it well. Thandai Powder ready and this prepared mixture can be used for 4 cups of milk.
Thandai Preparation :
- Here I have used 2 cups milk so added half of thandai powder to it.
- Add to chilled milk. I used boiled, cooled and chilled milk.
- Mix it well. Instant thandai ready. Serve thandai chilled!

Thandai Powder Recipe Step by Step

6.Grind it as fine as possible. Do not grind more otherwise it might form lumps and leave oil from nuts.
7.Add it to the sieved mixture.
8.Mix it well.
9.This prepared mixture can be used for 4 cups of milk. Here I have used 2 cups milk so added half of thandai powder to it.Boil milk well, cool down then chill it.
10. Add to chilled milk. I used boiled, cooled and chilled milk.
11.Mix it well. Instant thandai ready. Serve chilled!

Expert Tips

Storing and Serving Suggestion
Store the prepared thandai powder in an airtight jar. It keeps well in room temperature for 3-5 days after that I recommend to keep it refrigerated which increase shelf life upto 3 months. Use a clean dry spoon everytime.
Boil milk, add prepared thandai powder mix well and serve hot if preferred or chill the drink and serve. Thandai is commonly served chilled.

I wouldn’t recommend using rose petals if you plan to store the thandai powder for long as it gives a not so pleasant smell if stored for a long time. So I suggest to add rose petals as garnish while serving or use rose essence instead.

You can skip it too and it does not make much difference in taste.

Thandai is one of the drinks made for Holi festival.Thandai is a very popular drink in North India made with a combination of nuts and spices, very refreshing and a great body cooler.I have seen few good brands selling thandai masala powder, but we can make it very easily at home so tried it, the flavour is so good.
Last year itself, I wanted to make this and store but somehow it got missed so this year its done.
Ingredients
- 1/4 cup almonds
- 1/4 cup cashews whole
- 1/8 cup pistachios
- 1 tablespoon melon seeds
- 1 teaspoon pepper corns
- 1 teaspoon fennel seeds
- 10 nos cardamom
- 5-6 strands saffron
To make thandai:
- 1 cup milk (boiled,cooled and chilled)
- 2 teaspoon thandai masala powder
- 1 teaspoon sugar
How to make Thandai Powder
- In a clean dry mixer jar, add almonds,cashews and pistachios.
- Then add pepper corns and fennel seeds,melon seeds,cardamom,saffron,dry rose petals.
- First grind it to a coarse powder.Scrap the sides and pulse it few times. Do not grind more, as the nuts may leave out oil.Transfer to a plate and let it cool down then store in a clean airtight container.
- Take 1 cup chilled full fat milk.Add 2 teaspoon thandai masala powder to it.
- Add sugar.Mix well.Set aside atleast for 15mins.
- Then strain,press it well with a spoon.Serve chilled with few strands of saffron.
Serve chilled.
Store in clean,dry airtight container.
Serve thandai chilled.
