This fruit cake is one of the simplest which calls for no soaking in alchocol like most of fruit cake recipes.These muffins can be made into a cake also. This recipe doesnt calls for the dry fruits to be soaked in advance, you can just soak in hot water few mins before baking this cake. Above all these muffins are healthy and can be had guilt free as it uses whole wheat flour and cane sugar.
Generally traditional fruit cake is made by soaking dry fruits in alchohol few months in advance but this cake muffins on the opposite can be made made instantly. This is one delicious way to include dry fruits and nuts especially for kids.
About this recipe
- Spice mix : To begin with, first make the spice mix ready. For this I have used cinnamon,cardamom, cloves and nutmeg. Grind it a dry mixer jar as fine as possible. The quantity we use here is very less, therefore, I used hand mortar and pestle which does the job perfectly.
- Soak dry fruits in hot water : I have used tutti frutti and raisins. Likewise, you can use any type of fry fruits mix ecept the glazed variety. Just soak the measured dryfruits in hot water and set aside.
- Flour mix : Subsequently, mix wheat flour with baking soda and spice powder. Sieve it well, whisk and set aside.
- Mix to make batter : Later mix sugar with vinegar,salt,orange juice,melted butter and prepared dry fruits mixture and flour mix. Make a thick batter, pour into muffin liners.
- Bake : Finally bake in preheated oven for the mentioned time.
Variations
- In addition, you can use black raisins, cranberries, citrus fruit peels, cherries etc. I wanted to make a simple cake with easily available ingredients so used just tutti frutti and raisins.
- You can use regular white flour / maida
- Likewise, you can replace cane sugar with brown sugar or white sugar too.
- Replace vinegar with lemon juice if you don’t have vinegar.
- Furthermore, Orange juice can be replaced with apple juice.
Storage
Generally the fruit cake muffins keeps well for about 5 days in room temperature and for about a week in fridge. I wouldnt recommend freezing the muffins.

Eggless Christmas Muffins
Ingredients
- 1 cup whole wheat flour
- 1/4 teaspoon baking soda
- 1/2 cup cane sugar
- 1/4 cup melted butter
- 1 teaspoon vinegar
- 1/4 cup orange juice
- 1/2 cup hot water
Dry fruits and nuts:
- 1/4 cup tuttifrutti
- 1/8 cup raisins
- 3 tablespoon almond
- 3 tablespoon cashews
Spice mix: Use 1/2 teaspoon of this spice mix powder
- 1 3 inch cinnamon
- 5 pieces cloves
- 2 pieces cardamom
- 1/2 inch nutmeg
Instructions
- To begin with soak tutti frutti and raisins in hot water. Set aside.
- Next to prepare spice mix : take cinnamon, cloves, cardamom and nutmeg.
- Grind it as fine as possible. I used my hand mortar and pestle to do the job. Slightly coarse is ok as we are anyway going to sieve it along with flour. Set it aside.
- Next to a a sieve : add flour, baking soda and spice mix. Sieve it well.
- After that mix it well with a whisk and set aside. Flour mix ready.
- Next to another mixing bowl add sugar, salt, vinegar.
- Add freshly squeezed orange juice. You can use packed juice also however using fresh orange gives a good taste. Hence I recommend using fresh orange juice. The taste of the fruit cake muffins depends on the fruit we add.
- Add melted butter to it. After that whisk it well.
- Now add flour together with cashews and almonds chopped.
- Mix to from a batter. Do not overmix gently fold in otherwise muffins will become hard.
- Consequently, the batter will be thick. Fruit cake muffin flavor....Hmm....
- Scoop out the batter using a icecream scooper.
- After that line muffin liners to a muffin tray. Add the batter to it until 3/4th.
- I got 6 medium sized fruit cake muffins.Preheat oven at 175 deg C for 10 mins.
- Finally bake in preheated oven at 175 deg C for 20-25 mins or until a tooth pick inserted in center comes out clean.

- Also use dry fruits of your choice.
- Instead of curd you can use milk too.
- You can increase the measure of dryfruits if you want.In total you can add upto 1 cup. I wouldn't recommend adding more.
