There are few things you need to keep in mind while making peanut butter
- Peanuts – Choose good variety fresh peanuts. I use unsalted raw peanuts and roast it myself. You can use ready made roasted peanuts too.
- Other ingredients – You don’t even need other ingredients just peanuts is enough to make peanut butter but as we want to add sweetness and flavor we add sugar, oil and salt.
- Toasting – You can toast it in stove top in a flat bottomed skillet or pan. Be patient and toast it in low medium flame. For oven : Preheat oven at 176 deg C and arrange the peanuts on a parchment paper and Bake it for 10-12 minutes until golden brown.
- Stages in grinding – grind roasted peanuts – becomes brittle – then turns sticky – turns clumpy – becomes like a paste – add sweetener, oil, salt – crunchy peanut butter – creamy peanut butter.
- Mixer – Make sure to stop and then grind it so that the blender does not get hot. Also we need to scrape the sides and bottom in between. Be patient and stop in between grinding.

Peanut Butter Ingredients
- Peanuts – You can use roasted peanuts or raw peanuts. If using raw peanuts roast them well then remove the skin and use it. Even if you us e roasted variety I would suggest to roast it a bit to bring out the nutty flavor of the peanuts.
- Sweetener – I have used brown sugar which works best. Alternatively you can use honey or regular white sugar or maple syrup or agave too.
- Oil – Oil acts as a natural preservative also keeps the consistency perfect. It bumps up the creaminess.
- Salt – Salt is optional but elevates the sweetness so I always prefer adding.
You can use either raw peanuts or the roasted variety without skin. If you get raw peanut skin removed I would recommend buying that as it makes job more easier and quicker.
The roasted variety available in stores is not so fresh so what you can do is roast it again while making peanut butter to bring out the nutty flavor of peanuts.
I usually prefer to buy raw peanuts as it is more fresh than the roasted variety. It is such a content to see the whole peanuts transforming into such smooth, creamy and delicious peanut butter.

Expert Tips
- The texture is purely your choice, if you want it crunchy then stop with step 23. I wanted smooth peanut butter so grind it accordingly.
- The color of the peanut butter is purely based on how much you roast the peanuts. Roasting until golden brown is recommended for a flavorful nutty peanut butter also it gives a more flowing consistency and stays so even after few weeks.
- Add peanut oil or cooking oil.
- I have tried with jaggery and honey too. If you are using jaggery as such then use cleaned jaggery.
- Keep refrigerated to increase shelf life. It will become slightly thick after a week of refrigerating it but still it will be spreadable.
- You can even use peanuts with skin but that will give a slightly bitter taste.
- I used my mixer jar, you can use your food processor too.
- If you want chunky peanut butter then reserve a handful of peanuts and add at the final stage, give a quick pulse so that the peanut pieces come here and there while eating.
- Flavor Variations – You can add cinnamon or cocoa powder or vanilla essence. You can experiment with different versions.

Hi Sharmi, nice recipe. Really very easy and time saving one. For morning school hurry burry packing, its really handy. Your photographs showing the texture and even taste….. so creamy and yummy…. one doubt, why you say keep it in fridge after 2 days… any specific reason…..? Do you think if we keep out, it will be there after two days…. only empty bottle…..
Meena Srinivasan
Amma says coorectly, it gives pitham. If we split and take out that sprout/mullai its good. Another way we can be sure of all nuts are good one, if we use full ones some of them may spoiled and make whole thing bad. Removing skin, Splitting into two and checking is really a must step in all kind of peanut cooking.
In a movie Actor Shivaji too quote abt this, I forgot the name of the movie, He and Saritha travels in train every day, he buys groundnuts and while eating he reserves few and says abt peanuts good and bad and compare our live with it. Amma's words reminded that. Thanks Amma.

For people in the US, it is opposite, Sharmi. Buying peanuts in Indian store will be more expensive than ready-made peanut butter from any grocery store.
