Matta Rice Payasam is a rich delicious creamy dessert made using Kerala brown or matta rice and milk as main ingredients.
We all love thick creamy kheer or payasam and payasam or milk kheer is our family favorite.Usually I make paal payasam with raw rice or basmati rice.This time tried it using Kerala brown rice or matta rice as they call it and the payasam turned out so delicious.I had a pack of kerala brown rice which I had bought earlier so thought to use it up.
Kerala rice is very nutritious and has a lot of health benefits.We call this rice by many names like matta rice,kerala brown rice or palakkadan matta rice etc.This dish can be prepared using any rice that is available in the market for instance brown rice or handpound rice etc.
- I used full fat milk as a result got a thick and creamy payasam.
- I loved this payasam because it is nutritious and at the same time it is so creamy and delicious.
- In addition you can add nuts and dry fruits to this payasam.

Matta Rice Payasam
Ingredients
- 1/8 cup kerala matta rice
- 4 cups milk full fat milk
- 1 cup sugar
- 1/4 teaspoon cardamom powder optional
- a tiny pinch salt
Instructions
- Measure and take kerala matta rice.
- Pulse it few times to get coarse mixture.
- Rinse it well using a fine holed strainer. Set aside.
- Boil milk and simmer for 5 mins.
- Now add matta rice mixture.
- Mix it well.
- Cook until rice turns soft it may take some time.
- Cook in low flame and keep stirring.
- Mash it to check, when pressed should be easily mashable then its done.
- Add sugar only after rice is cooked soft.Mix well.
- Scrap milk solids at the sides into the payasam.This makes the payasam more creamy.
- Finally add a pinch of salt to lift the sweetness and cardamom powder.
- Looks thick and creamy, this is the consistency we want.
- Switch off at this stage as it may turn thick after some time so switch off accordingly. Enjoy Matta Rice Paal Payasam!

- You can even cook rice in water then add to reduced milk incase if you don't have enough milk.
- Always add sugar only after rice is cooked.
- Adding a pinch of salt lifts up the sweetness.
- You can even add ghee fried cashews but usually paal payasam is enjoyed as such but its your preference.
- If it thickens after sometime, you can add little hot water to thin the consistency.
- You can enjoy the payasam hot or cold as per your preference.
- Switch off a bit runny as it might get thick later.
- You can replace matta rice with unakalari rice(pink rice) too.
