If you like lemon flavour in your bakes then these cookies are just for you.The lemon flavour with a complementing crunch from the poppy seeds, its absolute pleasure to bite into these cookies.You can just make a ball flatten them and bake it too, but I love to cut out cookies though its time consuming 🙂

Lemon Poppy Seed Cookie
Ingredients
- 1 cup whole wheat flour
- 1/4 cup powdered sugar
- 2 tablespoon poppy seeds
- 2 teaspoon lemon juice
- 1/2 teaspoon lemon zest
- 1/2 teaspoon baking powder
- 4 tablespoon oil
- a pinch salt
- ice water as needed
Instructions
- Measure and add wheat flour to a mixing bowl. Add baking powder and salt.
- Add black poppy seeds. Whisk it and set aside.
- In another mixing bowl add oil, powdered sugar.
- Add lemon juice. Whisk it.
- Now add lemon zest. Mix it. Then add flour mixture.
- Mix with your finger tips, now add chilled water little by little to form a dough.
- Cling wrap and chill it for at least 30 mins.
- Roll out the dough to 1/4inch thickness and cut out cookies using your favorite cookie cutter.
- Meanwhile preheat oven at 180 deg C for 10 mins.
- Collect the extras again roll out. Repeat to finish.
- Arrange in a baking tray with butter paper laid.
- Bake in preheated oven at 180 deg C for 10-12 mins or until the edges start to turn golden. Enjoy Lemon Poppy Seed Cookies!
