The speciality of this dish is it is one pot, usually pasta is precooked and tossed in sauce but in this recipe, the pasta is cooked along with the masala and it tastes soo delicious. As pasta is simmered along with masala and spices, it is so flavourful and yummy.
This is one pasta where Italian meets Indian and its a great fusion one pot dish. This Masala Pasta is a perfect Indo-Italian fusion with a burst of flavours. If you are a fan of tomato based pasta dishes then this is just for you soo juicy and flavourful.

Masala Pasta Ingredients
- Pasta – You can use any variety of pasta like macaroni, penne, fussilli etc. I have used Penne Pasta variety.
- Vegetables – I have used onion, tomato, capsicum, carrots, peas and corn. Additionally you can add mushrooms, cooked corn, baby corn or any other veggies of your choice.
- Spices & Herbs – Indian spice powders like turmeric powder, red chilli powder, jeera powder, coriander powder, garam masala powders are used.
- Cheese – Though cheese is optional we add it make it more rich and creamy. But it is purely your preference.
- Oil – Olive oil is preferred for this recipe however you can use regular cooking oil too.

Masala Pasta
Ingredients
- 1 tablespoon olive oil
- 1 cup pasta (I used penne variety)
- 1/2 cup onion finely chopped
- 1 teaspoon ginger garlic paste
- 1 cup raw tomato puree
- 1/4 cup carrot chopped
- 1/4 cup capsicum chopped
- 1/4 cup sweet corn
- 1/4 cup green peas
- 1 tablespoon tomato sauce / ketchup
- 1/4 teaspoon turmeric powder
- 1 teaspoon kashmiri chilli powder
- 1/2 teaspoon garam masala powder
- 1/2 teaspoon coriander powder
- 1/2 teaspoon jeera powder
- 1 tablespoon cheese
- 1 tablespoon coriander leaves chopped
- salt ot taste
Instructions
- Heat 1 tablespoon olive oil add 1/2 cup finely chopped onion along with 1 teaspoon ginger garlic paste.
- Saute until onions turn transparent.
- Add 1 cup raw tomato puree. Just grind 3-4 tomatoes to a fine puree without adding water and then add it
- Give a quick saute and let it boil.
- Cook until raw smell of tomatoes leave.
- Add 1/4 teaspoon turmeric powder, 1 teaspoon turmeric powder, 1/2 teaspoon coriander powder, 1/2 teaspoon cumin powder(jeera powder) and 1/2 teaspoon garam masala powder along with required salt.
- Give a quick mix.
- Add 1 cup raw pasta along with 1/4 cup carrot and 1/4 cup peas.
- Mix well and cook for a minute.
- Add 1 tablespoon tomato ketchup.
- Give a quick mix.
- Add around 2 cups water. Give a quick mix. Water quantity may vary according to the pasta variety.
- Cook covered for 2 mins.
- Then give a quick stir.
- Again cook covered for few more mins until pasta gets cooked.
- Cook until pasta is soft but not mushy.
- By now the pasta is cooked soft and sauce has reduced a bit.
- Check by pricking a pasta with fork. Pasta should be cooked fork tender.
- Finally add 1/4 cup boiled sweet corn and 1/4 cup capsicum.
- Give a quick mix cook for a minute.
- Finally garnish with 1 tablespoon grated cheese and 1 tablespoon capsicum.
- Give a quick mix and switch off. Masala Pasta is ready!
- Masala is ready. Serve hot!

19.Finally add 1/4 cup boiled sweet corn and 1/4 cup capsicum.
20.Give a quick mix cook for a minute.
21.Finally garnish with 1 tablespoon grated cheese and 1 tablespoon capsicum.
22.Give a quick mix and switch off.

Expert Tips
- The spice powders can be adjusted to your taste preference. This is medium spicy.
- You can add any vegetable of your choice like baby corn mushroom etc.
- I have used penne pasta variety you can use any variety of your choice.
- Make the sauce a bit goey and not too dry. Switch off when it is still runny as it tends to thicken with time.
Storing & Serving Suggestion
- Serve it as such hot or serve it along with a toasted bread.
- I would recommend to consume it fresh. Incase you want to store this pasta is not a good fit. May be you can cook pasta make the sauce and keep both separate and when you want to serve you can toss both and serve.

It is just grinding red chillies with little water for easy grinding you can soak red chillies in water for few mins then grind
