Chats always have an extra space even when my tummy is full. I have tasted masala puri in many places like SKS, A2B etc but the one I love is the street style so I searched for a similar recipe and I am glad I found this. Do try it and enjoy the street style masala puri at home!

About Masala Puri
Masala Puri is a popular street food or chat served hot with crushed pooris and masala gravy smeared over it with a generous sprinkle of chat chutneys, raw onion and coriander leaves.
To me this masala puri tastes just like the street ones which is what I wanted. First when I was cooking the gravy I felt like a overdose of the spices and was skeptical of how it would turn out. But once fully cooked and assembled it tasted awesome, hubby loved it and asked for a extra helping and yes mission accomplished.

Masala Puri Ingredients
- Puri – Readymade puris are available in stores, you can buy them or make puris at home.
- Green Peas – Dried green is soaked and cooked until soft and added.
- Dal – Toor dal adds volume and thickness to the gravy.
- Masala paste – A masala paste is made by grinding whole spices with coconut, red chili powder etc.
- Carrot – Grated carrots are added for garnish.
- Chat Chutneys – Green chutney and sweet chutney is added.
- Onion – Adding raw onion as garnish gives a nice taste.
- Coriander leaves – Add chopped coriander leaves for garnish.
How to make Masala Puri Step by Step
1.Dry roast all the spices for few minutes till nice aroma comes. Grind it along with coconut and red chili powder to a fine paste.
2.Pressure cook peas for 3 whistles or until soft, Pressure cook toor dal for 4 whistles with immersing level of water, mash it up so that it is fine. Transfer dal to a heavy bottomed container and heat it up.
3.Add coconut paste to it and allow it to boil for a good 5 minutes (add water if it is too thick). Add required salt. Then transfer the cooked peas and give a quick stir.
4.Simmer and allow it to boil and thicken to the desired consistency. The gravy should not be too thick or too thin. It should be semi liquid. Now in the serving plate take 5 -6 puris and crush them.
5.Add peas masala, then drizzle sweet and green chutney. Add onions, carrot and sev as topping. Finally garnish with coriander leaves.
Once assembled serve immediately when the gravy is still hot and the puris are crispy.
Expert Tips
- I didn’t have marathi moggu so used star anise instead though it is not the actual equivalent.
- Do not use fresh peas. Use only dried peas for this gravy.
- The above quantity is for making 2 plates.
- Adding sweet and green chutney is purely optional but I recommend adding them for the extra flavor.
- I love sweet chutney in masala puris so go for extra helping.
- The toppings can be adjusted as per your taste.
- Make sure to serve while the gravy is still hot to enjoy the taste.
- I used homemade puris, you can use store bought ones too.
Serving and Storage
Make the masala gravy and keep it ready. You can make the chutneys, puri ready. On the time of serving assemble the chat and serve hot immediately.

Ingredients
- 10 puris

You can use white chana also but for maslaa puri usually green / yellow peas is only added…

i had one time in bangalore… The masala puri is god for my tongue… i love it… it was nice in bangalore… i have also tasted in other states but not much tastier than bangalore.
