Sevai or Idiyappam is a traditional breakfast dish from Kerala cuisine. I love all sevai varieties either plain sevai or sweet idiyappam with sugar or lemon sevai. This masala sevai is one of my recent favorites.

About Masala Sevai
Masala Sevai is made using idiyappam, onion, tomato herbs and spices. It is loaded with bursting of masala flavors so named as masala sevai. This can be served for breakfast or dinner, tastes great on its own needs no side dish at all.
Last time when we visited my sil’s place she served this along with other breakfast items. The instant I tasted this, I loved it as it had a burst of all flavors that I liked. So I got the recipe from her and recreated it in my kitchen and here is the recipe for you all.

Masala Sevai Ingredients
- Idiyappam – I have used homemade idiyappam. You can use store bought readymade idiyappam too.
- Onion, tomato – Onion, tomato is sauteed well and used.
- Spice powders – Turmeric, red chili and garam masala powders are used.
- Tempering – Oil is heated then a tempering is made with fennel seeds, curry leaves, cinnamon and cloves.
- Garnishing – Coriander leaves is used for garnish.

How to make Masala Idiyappam Step by Step
1.Cook idiyappam and let it cool for some time. Crumble it so that it is separated, Set aside. Heat oil in a kadai – add the items listed under ‘to temper’, let it splutter.

2.Then add ginger garlic paste, onions and sauté for 2mins then add tomatoes, mint leaves and sauté till raw smell leaves. Then add turmeric powder, red chili powder, garam masala powders and required salt.

3.Once its well blended add idiyappam and mix well. Finally garnish with coriander leaves and switch off.

Serve hot or warm.

Expert Tips
- Adding spice powders is purely your choice. If you don’t want whole spices flavor then temper mustard, jeera and add sambar powder which will give a different flavor.
- Mint leaves gives a nice twist to this masala idiyappam so don’t skip it.
- Idiyappam dries up fast so serve immediately or within an hour after cooking.
Serving and Storage
Masala Idiyappam can be served as such or with coconut chutney. This keeps well in fridge for 1 day, reheat and serve it.

Ingredients
- 1 cup idiyappam
- 1 medium sized onion finely chopped
- 1 teaspoon ginger garlic paste
- 1 medium sized tomato roughly chopped
- 10 mint leaves
- 1 tiny pinch turmeric powder
- 1/2 teaspoon red chilli powder
- 1/2 teaspoon garam masala powder
- 1 teaspoon coriander leaves
- salt to taste
To temper
- 2 teaspoon oil
- 1/2 teaspoon fennel seeds
- 1/4 teaspoon cinnamon
- 2 cloves
- a sprig curry leaves
