Pesto Sandwich is made by sandwiching pesto sauce along with onion, bell pepper, cheese, mixed herbs and toasting the sandwich until crisp. Crisp sandwich with a cheesy flavorful pesto filling along with crunchy vegetables makes this sandwich so unique.

- Pesto Sauce – I used homemade fresh pesto sauce. You can use store bought pesto sauce too.
- Bread – I used brown bread. You can use regular white bread or multigrain bread too.
- Vegetables – I used onion and bell pepper. You can use other vegetables like mushroom corn along with it.
- Cheese – I used mozzarella cheese. You can use Parmesan cheese or processed cheese too.
- Butter – Butter is needed to toast the sandwiches.
- Herbs – Add mixed herbs or a combination of chili flakes and oregano.
How to make Pesto Sandwich Step by Step
1.Toast 1/3 cup pine nuts until golden and set aside to cool. Toasting nuts brings out the nutty flavor.
2.To a food processor or blender add toasted pine nuts along with 2 cloves garlic.
3.Clean and rinse 2 cups basil leaves well. Drain water completely. Add the basil leaves along with salt to taste.
4.Add 1/2 teaspoon pepper powder.
5.Add 1/3 cup Parmesan cheese.
6.Add lemon juice from 1/2 lemon.
7.Blend it and add olive little by little while blending. Use 1/3 cup olive oil add it in 3-4 parts.
8.Blend it until coarse not too smooth.
9.The consistency is slightly coarse. Fresh Basil Pesto Sauce is ready!
10.Apply butter on both the sides of a bread slice. Repeat it for another slice and set aside.
11.Add 2 tablespoon pesto sauce along with 1 tablespoon onion, 1 tablespoon bell pepper.
12.Add 2 tablespoon cheese along with a sprinkle of 1/4 teaspoon mixed herbs.
13.Seal with another bread slice.
14.Place the prepared sandwich on the skillet.
15.Press the sandwich with a flat base bowl or plate. This step ensures even sealing.
16.Flip over to other side. Toast until golden brown on both the sides.
17.Place it on a wooden board.
18.Cut and serve hot!
