Rocky Road Bars are crunch bars that are made using chocolate and marshmallows as main ingredients with other ingredients varying according to our choice. They are named ‘Rocky Road Bars’ because they look like the bumpy rocky roads that travelers used to go to gold fields.
This is a perfect no bake quick dessert to make without peanut butter. These Rocky Road Bars are the easiest – just 3 ingredients and you are good to go. Marshmallows, chocolates and biscuits nothing can go wrong with it. These no bake crunch bars are chocolate candy and treat for parties and get together.
Rocky Road has a varying history – Around 1853 many candies and chocolates were less than needed so businessmen thought of ways to sell them with the available ingredients like candies, nuts, chocolates, marshmallows etc and mixed them together. Then this became popular in Melbourne and as it looked bumpy exactly like the roads that were rocky which travelers used to go to gold fields and it was named so.
There is no specific ratio for rocky road bars – add in your favorite ingredients to chocolate and your choice of rocky road bars is ready! There are so many variations of rocky road bars like Easter rocky road bars, Christmas rocky road bars and holiday rocky road bars.

- Crackers – Mild sweet and salt crackers can be used too.
- Dry Fruits – You can add dates, tutti frutti, raisins, apricots or cranberries etc. Any dried berry can be used.
- Chocolate chips – You can even add chocolate chips are topping after adding the mixture.

- Milk Chocolate – I used a combination of milk and dark chocolate. Milk chocolate should be more to avoid bitterness in the bars.
- Dark Chocolate – Dark chocolate gives a nice intense flavor and color to the bars.
- Marshmallows – Use mini marshmallows or cut them into half if you have big ones as I have done.
- Biscuits – You can use cookies or biscuits. I used digestive biscuits which tasted great.
How to make Rocky Road Bars Step by Step
1.Break around 10 biscuits roughly and set it aside.
2.To a bowl add 200 grams marshmallows along with crushed biscuits. If your marshmallows are big chop into 2 and add it. You can buy mini marshmallows if you get it. Mix it well and set aside.
3.Mix 250 grams milk chocolate with 100 grams dark chocolate in a heat proof bowl.
4.To a sauce pan add water and boil it. Now place the bowl over the sauce pan making sure that the bowl does not touch the boiling water inside. This method is called double boiling method.
5.Start mixing when you see the chocolate starts melting.
6.Cook until the chocolate is melted completely.
7.Switch off and remove the bowl.
8.Add marshmallows and biscuits.
9.Mix it well.
10.Transfer the mixture to a 6 X 6 inch tray with parchment paper.
11.Set in fridge for at least 2 hours. This is after 2 hours.
12.Use a sharp knife to cut.
13.Cut into bars and serve!

Yes you can melt chocolate along with butter in the pan. Stir often as it melts. You can add 50 grams butter for 350 grams chocolate.
4.What type of chocolate should I use? My chocolate does not melt?
Always use cooking chocolate else it will not melt perfectly. Chocolate chips available in Indian stores does not melt properly so I always use cooking chocolate.
5.Can I use white chocolate?
Yes if you like! You can use a mix of white chocolate along with dark chocolate which will give the perfect color and taste.

Hi Sharmila mam , I’m a fan of your blog and have been trying your recipes right from my late teens and everything had come out pucca, a big thanks to you !!
I’ve also made these rocky road bars twice and savored it.
But only now , I came to know that the gelatin in marshmallow is actually from pig’s organ and is non veg.
I’m a pure vegetarian , but’ve become an addict of rocky road . (But doesn’t want to knowingly eat non veg )
I surfed the net and it seems there are vegan marshmallows available , but I haven’t found any in Coimbatore !!
So , can you please tell me any substitute for marshmallow in this recipe ?
