What is Schezwan Chicken?
Schezwan Chicken is made by first marinating chicken with flour and spices then deep frying it until crispy finally tossing it in a schezwan based sauce. It can be served as a great starter or can be paired up with noodles or fried rice or herb rice.
Schezwan or Sichuan or Szechuan is a style of Chinese cuisine originating from Sichuan province in South West China. Schezwan Sauce is fiery hot with a pungent flavour from garlic and red chillies.
Most Chinese dishes are flash cooked to get that smoky pungent flavor. So when all your ingredients are ready your Chinese dishes can get done in a breeze. Originally Chinese cuisine is more spicy, pungent, hot and tangy but most restaurants here in India have toned down it to suit our taste buds making it Indo Chinese. So it is a mix of Indian and Chinese to suit our taste and flavor.
Our family is fond of schezwan dishes and this Schezwan Chicken is no exception they just love it everytime I make. I usually make it as a starter as they enjoy it that way. You can either serve as a starter making it even more dry or make it semi saucey to pair with noodles and fried rice.

Schezwan Chicken Ingredients
- Chicken – Choose tender fresh chicken cut them into small pieces and use it
- Flour – Maida and cornflour is used for making the batter for deep frying. You can replace maida with wheat flour too.
- Sauces – Soya sauce, schezwan Sauce and tomato Sauce is used. You can add chilli sauce in addition too.
- Vegetables – Ginger, garlic, onion and spring onion are used.
- Spice powders – Pepper Powder is the main spice powder used here.
- Others – Egg is used to make the coating stick to the chicken.
How to make Schezwan Chicken Recipe Step by Step
1.To a mixing bowl add 300 gms chicken along with 2 tablespoon cornflour, 2 tablespoon maida, salt to taste, 1/4 teaspoon pepper powder, 1 teaspoon ginger garlic paste and 1 egg.
2.Mix it well to form a marinade to coat the chicken.
3.Heat oil in a kadai – add the chicken in small batches.
4.Add in small batches depends on the size of the kadai too. Do not disturb for few seconds.
5.Flip over after few seconds and fry.
6.Fry until golden brown.
7.Drain and remove it. Repeat to finish other batches too.
8.All fried and ready. Set it aside.
9.Heat 1 tablespoon oil – add 2 small red chillies, 1 teaspoon ginger, 1 teaspoon spring onion white, 1 tablespoon garlic, 1 and 1/2 tablespoon onion.
10.Saute for a minute in medium high flame.
11.Now add 1/2 teaspoon soya sauce, 1/2 teaspoon sugar, 1/2 teaspoon pepper powder, salt to taste, 1/2 teaspoon vinegar, 1 and 1/2 tablespoon schezwan sauce, 1 tablespoon tomato sauce.
12.Give a quick mix.
13.Add 1/4 cup water give a quick mix.
14.Add fried chicken.
15.Give a quick mix.
16.If you like it more saucy then garnish with spring onion and switch off at this stage. But I like to reduce the sauce a bit so cooking for few more mins in medium flame. Then add 1/2 teaspoon crushed pepper.
17.Finally garnish with 1 tablespoon spring onion and switch off.
18.Schezwan Chicken is ready to serve!

Expert Tips
- You can make it gravy or semi gravy in consistency as per your liking.
- Choose tender juicy chicken, breast pieces will work great.
- The gravy tends to thicken if resting time is given, so switch off accordingly. If it becomes too thick then sprinkle little water, heat it up before serving.
- Adding onion is optional as we add spring onion.
- Using freshly ground pepper at the final stage adds a great flavor to the dish.
- Do not skip spring onion as it is one of the main ingredient for any chinese dish.
- You can make homemade schezwan sauce or use storebought sauce too.
- You can also add capsicum if you like the flavor.
Serving & Storage
Serve schezwan chicken with fried rice or as a starter as it tastes great on its own too. I would not suggest to store this as the taste may differ after cooling down. So I would recommend to cook and consume it fresh.
