Schezwan Dosa is a variation to the regular dosa that the family will crave for more. Schezwan Dosa is an Indo Chinese fusion that has become a standard staple at home that I make it at least twice a month.

About Schezwan Dosa
Dosa is an Indian crispy crepe and Schezwan Dosa has a stuffing made with vegetables along with a special sauce called schezwan sauce which is made using sichuan pepper. Schezwan sauce has gained popularity all over the world, especially in Indian and Indo-Chinese cuisines.
Schezwan Sauce is a spicy hot sauce originated from Sichuan province in China. Schezwan Sauce can be added to make schezwan fried rice, noodles or to any dish to make it hot, flavorful and spicy.
You can reduce schezwan sauce in the dosa to reduce spice to make it suitable for kids too. I always add kashmiri red chilies while homemade schezwan sauce so that it is less spicy. Gugu who runs miles away for spicy food is fond of this dosa.
Schezwan Dosa Video (without vegetables)
Schezwan Dosa is an Indo chinese twist given to the usual South Indian dosa. If you are a fan of spicy dosa recipes then this is a sure try for you! This Schezwan Dosa is a very popular Mumbai street food. Though I haven’t tasted this dosa anywhere outside or in restaurants I saw a you tube video and got an idea.
I tried to replicate the street style schezwan dosa but in a more healthy way by adding more vegetables. You can make this dosa without vegetables and just with schezwan sauce and cheese too. There are a lot of variations to this simple dosa.
I wanted to try few schezwan recipes with homemade schezwan sauce, this one was a huge hit and surprisingly mittu loved it too. And no wonder hubby just loved it so much as he loves anything with dosa.
Schezwan Sauce
Schezwan Sauce is a spicy hot sauce originated from Sichuan province in China. It is made using red chilies, garlic, onion, sichuan pepper, ginger, vinegar and sauces.
Schezwan Sauce is fiery hot with a pungent flavor from garlic and red chilies. Schezwan Sauce is made by soaking & grinding red chilies and simmering with garlic, ginger, soya sauce, vinegar and spices.
You can make this sauce and store in fridge for about a month. Schezwan sauce is readily available in store nowadays.

Schezwan Dosa Ingredients
- Dosa batter – Thin the batter slightly by adding little water if the batter is thick so that spreading dosa is easy.
- Vegetables – Vegetables are absolutely your choice you can add onion, carrots, spring onion, cabbage and capsicum. In addition you can also add mushrooms, corn, baby corn etc.
- Sauces – Schezwan sauce is the main sauce used here. In addition soya sauce and tomato chilli sauce is also added.
- Flavorings – Garlic and pepper adds more flavor to this dish.
- Butter – Butter is added while spreading schezwan sauce to the dosa. It helps spreading easier and also gives crispness to the dosa.
- Others – Pepper powder, vinegar is added.
How to make Schezwan Dosa Step by Step
Making vegetable stuffing
1.Heat 1 tablespoon oil in a pan, add 1 teaspoon garlic, 1/2 teaspoon spring onions white part. Give a quick saute until slightly golden.
2.Add 1/2 cup onion sliced, saute until transparent.
3.Add 1/2 cup carrot, 1/2 cup cabbage.
4.Saute for a minute then add 1/4 cup capsicum.
5.Saute in medium high flame for 2 minutes. When the veggies start to shrink stop sauteing. Add 1 tablespoon schezwan sauce.
6.Then add 1/2 teaspoon soya sauce, 1 teaspoon chili sauce, 1/4 teaspoon rice vinegar, 1/2 teaspoon pepper, salt to taste. Give a quick saute.
8.Finally add 2 tablespoon spring onion and give a quick mix. Schezwan dosa stuffing is ready.
Making schezwan dosa
9.Add little water to the idli batter if its too thick .Take 2 ladles of idli batter.
10.Heat dosa tawa, it should be sizzling hot. Now pour the batter, spread it evenly and thin. Add 1 teaspoon butter and a teaspoon schezwan sauce.
11.Spread it over the dosa. Drizzle little oil if needed.
12.When the dosa is half cooked – Add 2 ladles of the vegetable stuffing on the dosa.
13.Fold over as shown.
Schezwan dosa is ready. Serve hot!
Serve hot with side of your choice and pickle.
Expert Tips
- I have used onion, carrot, cabbage and capsicum you can add your favorite vegetables too. Add more colorful vegetables so that it will be appealing to kids.
- Drizzle oil at the sides while making dosa and limit butter. In streets schezwan dosa is loaded with butter. So its your preference whether to add more butter or not.
- You can add some grated cheese over the vegetable stuffing to make cheese schezwan dosa.
- Increase or decrease the measure of schezwan sauce according to the spice level you prefer. Schezwan sauce is on the spicier side so add it keeping that in mind.
- You can even add grated paneer along with vegetables. If adding add it at the final stage before green spring onion, give a quick mix and switch off.
Serving & Storage
You can make the vegetable stuffing and store in fridge for 2 days. Before few minutes of making dosa you can keep the stuffing outside, slightly heat it and use it. Schezwan dosa once made should be served hot immediately else it will become soggy. Schezwan dosa tastes great on its own however you can serve it with coconut chutney too.

Ingredients
- 3 cups idli dosa batter
- butter as needed

- 1/2 teaspoon spring onion (white part)
