About Potato Rice
I have tried this Potato Rice quite a few times now that I modified the recipe to suit our taste. Biryani always takes a special place in our menu either at home or in restaurants and sundays are always meant for making biryani, lazing around and having a late mild breakfast and waiting to feast on the royal biryani….Is that your routine too?

Potato Rice Ingredients
- Basmati rice – Basmati rice or seeraga samba rice is best for making biryani. However you can use any long grained rice.
- Masala paste – Coriander seeds, red chilies, coriander leaves, coconut and green chilies are grind to a paste.
- Onion, tomato – Onion is sliced thin and sauteed, tomato is pureed and added.
- Curd – Curd adds flavor to biryani.
- Spice powders – Red chili powder and Garam masala powders are added.
- Tempering – Whole spices including cinnamon, cloves and bay leaf is used for tempering.
- Ginger garlic paste – Ginger garlic paste is added for flavor.
- Coriander leaves – Coriander leaves is added for garnish, adds great flavor.

How to make Potato Rice Step by Step
1.Dry roast red chilies and coriander seeds till golden brown , then grind it along with other ingredients listed under ‘to grind’ to a fine paste with little water, Set aside. Soak basmati rice for 15-20 minutes.
2.Chop the potatoes into half(mine was little big so halved it), prick holes with a toothpick and add it along with the ingredients listed under ‘for the marinade’ and marinate for a least 15 minutes. Then deep fry / toast them till golden brown, set aside. Fry 1 onion chopped lengthwise to golden brown. Set aside.
3.Heat oil + ghee in a pressure cooker – add the items under ‘to temper’ then add onion, ginger garlic paste and fry till slightly browned then add tomato puree and cook till raw smell leaves.
4.Then add the coriander paste along with garam masala powder, saute for few mins till raw smell leaves then add roasted/fried potatoes and give a quick stir. Add required salt.
5.Add the presoaked rice, then water and pressure cook for 3-4 whistles. Once pressure releases fluff it up with a fork.
While serving garnish with fried onions and serve it onion raita / cucumber raita.
Expert Tips
- Make sure to prick holes so that the masala marinade gets inside the baby potatoes but be careful prick gently.
- My small potatoes were big so I halved them. If you have smaller ones just use them as such.
- This is little spicy so adjust green chilies and red chilies according to your spice level.
- You can use normal potatoes chopped into cubes too.
Serving and Storage
Potato Rice can be served with raita or even plain curd. This keeps well in fridge for 2 days, reheat and serve it.

Potato Rice Recipe | Aloo Rice Recipe
Ingredients
- 1 cup basmati rice
- 2 medium sized big onion chopped lengthwise
- 2 teaspoon ginger garlic paste
- 2 big tomatoes pureed
- 1/2 teaspoon garam masala powder
- 1 and 1/2 cups water
- salt to taste
- oil to toast / deep fry
To grind:
- 1 teaspoon coriander seeds
- 2 red chillies
- 3/4 coriander leaves loosely packed
- 3 tablespoon coconut
- 2 green chillies
For the marinade:
- 1 cup potatoes chopped
- 3 tablespoon thick curd
- 1/2 teaspoon red chilli powder
- 1/4 teaspoon garam masala powder
- salt to taste
To temper:
- 2 tablespoon oil
- 1 tablespoon ghee
- 1/4 inch piece cinnamon
- 2 cloves
- 1 cardamom
- 1/2 bay leaf

I tries this briyani n its was awsome.. Tasted very much like a restuarant style biriyani. My family loved it so much.. I cant believe tht it was over for the lunch it self coz every time if we hav biriyani for lunch it ll remain for dinner too.. But this was over. I was happy to see the empty vessel.. 😀
