S’mores cookies recipe – chewy cookies filled with toasty marshmallows, goey chocolate and crackers. S’mores cookies recipe with stepwise pictures and video.
Easy to bake and tastes delicious and there is no campfire needed like for making traditional S’mores.
After trying out S’mores, wanted to try these cookies too as they are too good to resist trying. And being at home there is constant demand for snacks especially cookies and my kids absolutely loved these cookies.
I referred this recipe and it will be my keeper recipe for s’mores cookies.
What goes into S’mores cookies:
Crackers: I used the crackers that is easily available here in India though graham crackers are traditionally used.
Marshmallows : You will need mini marshmallows for this. I had quite bigger ones, so cut my marshmallows into tiny pieces and used.
Chocolate : You can either use choco chips or compound chocolate. You use semi sweet or bittersweet as you prefer.
Brown sugar : Use brown sugar for the best texture. I used light brown sugar for this recipe, you can even use dark brown sugar.
Variations
- There are many variations you can make to this, you can add nuts, dry fruits.
- You can use fully chocolate compound chop them into bits and use it. I used choco chips for dough and chocolate chunks as topping for the cookies.
- You can even add a mix of milk and white chocolate. I have used dark chocolate here.
- You can even use homemade chocolate bark.
- We don’t get graham crackers here so I replaced it with salted crackers we get here easily. You can even use regular multigrain cookies.
Serving and Storage
- You can serve it with a cup of milk. It tastes best even when had as such.
- This keeps well in in room temperature for atleast 3 days in room temperature.
- You can refrigerate the dough for upto 3 months. Cling wrap it or put it in a ziploack bag and freeze it.

S'mores cookies recipe
Ingredients
- 1/2 cup semisweet chocolate chips
- 10 tablespoon butter unsalted at room temperature
- 1/4 cup granulated sugar
- 1/2 cup light brown sugar
- 1 no egg
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/2 cup marshmallows
- 1 small bar chocolate
- 5 nos crackers
Flour mix:
- 1 and 1/2 cups wheat flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon corn starch
Instructions
- To begin with first take crackers and marshmallows.
- Put the crackers in mixie, put on pulse mode and pulse it few times to get crumbs like shown below. Do not powder it fine. Cut the marshmallows into tiny bits like shown. Set aside.
- To a mixing bowl add flour,baking soda, baking powder, salt and cornflour.
- Mix it well using a whisk. Set aside.
- To another mixing bowl add butter, granulated sugar and brown sugar.
- Whisk it well until creamy. I used my electric beater to do this.
- Add an egg and vanilla essence.
- Whisk it well.
- Add flour mixture.
- Scrap the bowl and mix it.
- Mix it.When half of the flour is mixed, add cracker crumbs, chocolate chips and marshmallows. Reserve a tablespoon of marshamallows for topping later.
- Fold it using a spatula.
- Using a icecream scooper, scoop put the dough. I always use icecream scooper for even sized cookies.
- Roll and flatten it a bit. Repeat to finish the dough. Meanwhile preheat oven at 176 deg C for 10 mins.
- Line a parchment paper on a baking tray. Line the cookies on it.
- You can 2 options : Either bake in preheated oven at 176 deg C for 10 mins else bake for 8 mins. Pull out the cookie tray.
- Top it with small chocolate chunks and reserved marshmallows. You can even use choco chips for topping.
- Bake again for additional mins. And your cookies are done.
- Chewy s'mores cookies ready!
Notes
- You can bake it altogether for 10 mins itself. In this the chocolate and marshmallows don't pop out and gives a boring look. So I did the additional 2 mins baking for the topping to just turn slightly goey. But otherwose there is no compromise in taste in both the methods.
- Measure your ingredients correctly. Add the ingredients to measuring cups and spoons, level it using a knife or spoon.
- Let the cookies cool . They will be soft after coming out of the oven and takes little time to firm up.
