Ulundu murukku recipe a quick snack for Gokulashtami or Krishna Jayanthi.I had been eyeing on this urad dal murukku and tried it last diwali itself but couldn’t click pictures as I was in a hurry so made it again now to post it as Krishnar Jayanthi is coming on Aug 12th.
This murukku is our family favorite and it vanishes so soon even if I make a big batch.Do try this easy murukku for Gokulashtami and enjoy!
How to make crispy murukku?
- If right amount of fat ie butter / ghee is added and fried until golden murukku comes out perfect light and crispy.
- While frying murukku if you remove it a little before itself then murukku may become soft or soggy after cooling down.
- Temperature of oil is most important, check by dropping a small piece if its rises immediately then oil is ready.Adjust the flame then and there and fry to get evenly fried murukku.
Why is my Murukku breaking?
- If you add more butter / ghee then murukku may break.Incase by accident if you add more butter and while pressing the murukku starts to break then you can add little more rice flour, mix it well and try again.
- Also if the dough is stiff and if less water is added then murukku may break, in that case sprinkle little water knead it and then try again.
How do you make rice flour, What rice to use?
- Rice flour or idiyappam flour can be used for making murukku.Check the link for method.
- You can use store bought idiyappam flour too, no need to roast it – You can use it as such.
Variations
- You can add red chilli powder to make it spicy.But this murukku is usually made without spice with just salt.
- You can replace sesame seeds with jeera too.

Ulundu Murukku | Urad Dal Murukku
Ingredients
- 1 cup rice flour
- 1/4 cup whole white urad dal
- 1 teaspoon ghee
- 1/2 teaspoon sesame seeds
- 1/4 teaspoon hing
- oil for deep frying
- salt to taste
Instructions
- Rinse urad dal drain water and add to cooker along with 1/2 cup water. Pressure cook for 3-4 whistles.
- Drain water, cool completely then add to mixer and grind to a fine paste. Add little water if it gets stuck.
- To a mixing bowl - add this paste along with rice flour, salt, ghee, hing and sesame seeds. Mix this well first.
- Then add water little by little to form a smooth dough like shown.
- Make cylindrical log and keep it ready. Place star or any of your favorite murukku press, grease oil in the mould then fill the mould with dough.
- Then press in 3-4 laddles and keep it ready. Heat oil - flip the ladle gently, add 3-4 murukku at a time. Fry in batches.
- Flip over carefully, fry until golden on both the sides. Remove and repeat to finish. Enjoy Ulundu Murukku!

- While kneading you can check salt and add it if needed.

- Remove and repeat to finish.Fry in low medium flame to get that perfect golden color.
