Aval Kesari Recipe | Poha Kesari Recipe

Aval Kesari is a delicious sweet made by cooking poha with ghee, sugar, nuts, raisins and saffron. Poha Kesari is a nice idea to make instantly during sudden guests at home and liked by all. Learn to make Poha Kesari or Aval Kesari with step by step pictures and video.

Ingredients

  • 1/2 cup aval / poha (I used thick variety)
  • 3 and 1/2 tablespoon ghee
  • 1/2 cup sugar
  • 1 tablespoon cashews
  • 15 raisins
  • 1 cup water
  • 10 strands saffron

Instructions

  • Soak saffron in warm water, set aside. Dry roast poha until crisp.
  • Break to check, if it easily breaks then its crisp if it bends then roast for few more minutes. Cool down then transfer to mixer jar and grind to as lightly coarse mixture, Set aside.
  • Heat 1 tablespoon ghee, add cashews fry for a min, then add raisins fry till they turn golden. Remove and set aside. Now in the same pan add poha mixture. Roast for 2 minutes.
  • Take 1 cup water and heat it up. Add it, keep stirring simultaneously. Keep stirring in low flame to avoid lumps, even if it forms break it and mix well.
  • It will get cooked in a minute, keep stirring it will become thick. At this stage add sugar and saffron water.
  • Mix well, it will be runny at this stage. Once it starts to thicken add remaining ghee. Mix well and keep stirring. At one stage the whole mixture will leave the sides of pan and come together. If you like cardamom flavor then add a  pinch of cardamom powder too.
  • This is the right stage so add fried cashews, raisins give a quick mix and switch off.
  • Delicious soft aval kesari ready! Serve warm!

Notes

  • You can add a pinch of cardamom powder if you like the flavor.
  • Switch off when its slighting in flowing consistency as it will become thick while cooling down.
  • Don't compromise on ghee as that's the main ingredient which adds great taste to this kesari.
