Aval Urundai Recipe

Aval Urundai is a traditional sweet made using flattened rice flakes, jaggery, cardamom powder, coconut, cashews and ghee. Aval Urundai is a no cook sweet that is prepared for Krishna Jayanthi festival, at times made as an evening snack for regular days too. Learn to make Aval Urundai with step by step pictures.

Ingredients

  • 1 cup aval / poha
  • 1/4 cup thick jaggery syrup
  • 1/2 teaspoon cardamom powder
  • 3 tablespoon coconut grated
  • 3 teaspoon ghee
  • 1 teaspoon cashews broken

Instructions

  • Soak jaggery in warm water(till immersing level) , crush it well. Then heat it up until it is slightly thick (no string consistency needs to be checked). Strain and keep aside.
  • The syrup should more like honey consistency. Heat a teaspoon ghee in a pan, add the cashews till golden brown. Set aside. Now add the coconut and roast it for 2 minutes without letting the color change.
  • Rinse poha and soak it in water for 3-5 minutes. Drain water and squeeze the aval to drain the extra water. Mash it well. Then to a mixing bowl add poha along with jaggery, roasted coconut, ghee fried cashews, cardamom powder, remaining ghee and mix well.
  • Grease your hands with ghee and make lemon sized balls, your yummy aval urundai is ready to be served.
  • Your aval urundais are ready!

Notes

  • Instead of adding jaggery syrup you can even use powdered jaggery directly but make sure to use clean organic jaggery.
  • You can even fry raisins and add it.
  • Adding coconut enhances flavor. You can use fresh coconut desiccated coconut too.
  • I used thin poha so soaking time was less. If you use thick poha you many need to soak for 5 minutes.
