Lemon Squash

Lemon Squash is a ready made lemon concentrate that gets us refreshing instant lemonade anytime. Lemon Squash is made using just 3 ingredients lemon, sugar and water. Learn to make perfect Lemon Squash with step by step pictures and video.

Ingredients

  • 1/2 cup fresh lemon juice
  • 1 cup sugar
  • 1 cup water
  • 1/4 teaspoon cardamom powder (optional)

Instructions

Preparing lemon syrup

  • Use fresh lemons. Cut into half first then squeeze it using a lemon squeezer. Extract the juice, discard the seeds. Measure 1/2 cup lemon juice and collect the juice in a bowl and set aside.
  • To a sauce pan add 1 cup sugar.
  • Add 1 cup water to it.
  • Stir it well for the sugar to dissolve and let it to boil.
  • Let it boil until it reduces and starts to turn sticky. Stir very now and then. The syrup will start bubbling.
  • Add 1/4 teaspoon cardamom powder if you wish to add at this stage.
  • Allow it to boil. Carefully take the syrup and touch it between your fingers like this. The syrup with form half string but will break - this is half string consistency.
  • Once half string consistency is reached, Switch off and cool down completely.
  • Add the syrup to a fine holed strainer and strain it. You can even use a muslin cloth to strain. This is to remove impurities in sugar if any.
  • Add extracted 1/2 cup lemon juice to it. Add lemon juice only after the sugar syrup is cooled.
  • Mix it well.
  • Store in a clean dry jar, preferable glass.Keeps well in room temperature itself for 3 days after that refrigerate and use it.

To prepare lemon juice

  • Pour 2 tablespoon syrup in a glass.
  • Add 1 cup water to it adjust according to the sweetness you prefer. Add more syrup if you like.
  • Add few ice cubes and mix it well with a spoon. Lemon juice is ready!

Notes

  • Don't squeeze lemon very hard and take the juice as it will give a bitter taste.
  • Always mix lemon juice only after the sugar syrup cools down.
  • You can use fine strainer or even a muslin cloth to strain.
  • You can even use crushed saffron for a nice flavor and beautiful color it gives to the drink.
  • You can add soaked sabja seeds to lemonade.
  • You can skip cardamom powder and make it plain too, that's how my grandmother used to make.
  • Store in a sterilized glass bottle with tight lid for more shelf life.
  • Add ice cubes and serve the lemonade chilled.
