Boil until it forms a sticky syrup.
Switch off and cool down. Strain the syrup and set aside.
Rinse and get your mangoes ready. You may not end up using them fully, just showing what I used.
Peel off the skin, chop them and measure.I used alphonso mangoes.
Boil 2 cups of water. Add mango and raw mango, let it cook. Cook until they turn soft and should be easily mash able. It may take some 5-7 mins.
Once the mangoes turn soft and cooked switch off flame and cool down. Then add lemon juice from 1/2 lemon.
Drain the cooked water and remove the cooked mangoes alone. Do not discard the water we will need it at a later stage.
Add it to a mixer jar.
Blend to a fine puree.
Transfer the puree to a bowl then add the reserved cooked water.
Add prepared sugar syrup.
Now all added.
Whisk it well.
Add 1/2 cup to 3/4 cup chilled water if the mixture is too thick.
Transfer this to a strainer.
Press well and extract the juice. Discard the remains.
