  • 1 cup mangoes chopped roughly
  • 1/2 cup raw mango chopped roughly
  • 1/3 cup sugar
  • 3 cups water
  • 1/2 to 3/4 cup water if needed
  • 1 teaspoon lemon juice

Instructions

  • Take 1 cup water in a sauce pan - add 1/3 cup sugar to it.
  • Boil until it forms a sticky syrup.
  • Switch off and cool down. Strain the syrup and set aside.
  • Rinse and get your mangoes ready. You may not end up using them fully, just showing what I used.
  • Peel off the skin, chop them and measure.I used alphonso mangoes.
  • Boil 2 cups of water. Add mango and raw mango, let it cook. Cook until they turn soft and should be easily mash able. It may take some 5-7 mins.
  • Once the mangoes turn soft and cooked switch off flame and cool down. Then add lemon juice from 1/2 lemon.
  • Drain the cooked water and remove the cooked mangoes alone. Do not discard the water we will need it at a later stage.
  • Add it to a mixer jar.
  • Blend to a fine puree.
  • Transfer the puree to a bowl then add the reserved cooked water.
  • Add prepared sugar syrup.
  • Now all added.
  • Whisk it well.
  • Add 1/2 cup to 3/4 cup chilled water if the mixture is too thick.
  • Transfer this to a strainer.
  • Press well and extract the juice. Discard the remains.
  • Mango Frooti is ready!
  • Chill it and Serve!

Notes

I used alphonso mangoes and recommend using the same as it gives the best taste for this drink. If you don't get alphonso then use any fiber less juicy mangoes.
After straining if its too thick add little more water but only if needed. Adjust according to the consistency.
You can even add sugar while cooking the mangoes itself. But amma says making sugar increases shelf life so tried it this way though it got over in a day so couldn't test it.
Lemon juice acts as a natural preservative but add very little.
You can alternatively pressure cook for 3 whistles then proceed with the remaining steps too.
