To a mixing bowl add 1 cup flour along with salt to taste, 1/4 teaspoon turmeric powder, 1 teaspoon red chili powder, 1/2 teaspoon black sesame seeds, 1/2 teaspoon ajwain and 1 tablespoon ghee.
Mix this well first until ghee is evenly distributed.
Add water little by little.
Start kneading. Knead to a soft non sticky dough like this.
Keep it covered for 10 - 15 minutes.
After 10 minutes knead it once again.
Roll into small balls and flatten it slightly.
Dust flour place it and sprinkle little more flour.
Roll into slightly thin disc like chapathi.
It should be slightly thin like this.
First cut vertically using the diamond cutter or pizza cutter.
Now cut horizontally to get diamonds like this.
Now all cut and ready.
Separate them. Do not worry if it sticks, when we fry in oil it gets separated easily.
Heat oil - check by adding a small piece, it it comes up immediately then oil is ready.
Add few at a time.
Once it rises up flip over to fry evenly.
Fry until reddish golden color and bubbles stops.
Drain excess oil and remove using a ladle.
