First to a pan add 3/4 cup sugar and 1 cup water to it.
Boil well until sugar dissolves completely, no need to check for consistency. Once sugar dissolves and it starts to boil switch off and set aside.
Heat 1/4 cup ghee. You can fry nuts if you want and remove it.
Add 1/2 cup wheat flour to it.
Mix it well and keep roasting in low flame.
Roast until the color changes to dark shade and the mixture looks more like a paste. It will give a nutty fragrance.
Now heat the prepared sugar syrup and add it.
Immediately stir well to avoid lumps.
It may look like small lumps are forming keep stirring and it will break off while cooking.
Cook until thick and the mixture leaves sides of the pan.
Add 1/4 teaspoon cardamom powder.
Mix it well.
Ghee slightly oozes at the edges this is perfect consistency.
Add 1/2 tablespoon chopped almonds, 1/2 tablespoon pistachios.
Mix it well and remove from flame.
Atta halwa or wheat halwa is ready!
